Open Fermentation Method

We are one of the few breweries in Latvia that still uses the open fermentation method. This technique gives our beer an unmistakable character and unique taste – each brew is like a living organism that requires the care and attention of a master brewer. Our beer ferments in open-type vessels, where the fermentation process is not only visible but also closely monitored. We observe how the foam forms and changes, and once the beer is ready, we skim the foam layer with a special foam skimmer. In addition to beer, we have also developed a unique kvass fermentation method that uses barley malt and chicory extract, creating a rich and expressive flavor.
